kalchina vankaya( baingan bartha andhra style)

ingredients
1 large big egg plant the big ones they sell
green mirchi
onion
tamarind paste
gumadikaya vadiyallu( optional)
jeera
mustard seeds
senaga pappu
menapa pappu
curry leaves
coriander

procedure:
coat the egg plant with oil and place it on the gas stove electric stove does not work
and cook it till it starts to wither and slowly becomes smaller in size trust me it makes the stove a mess after its done and water also comes out of it.
thats when its done

allow to cool and peel off the charged black coat.
and remove with a spoon the inside cooked part in take in a bowl and mash coarsly with a spoon and add salt and let stand
now for seasoning add green mirchi as per taste 1 small sized onion and mustard seeds and jeera and haldi and curry leaves and at the end tamarind paste made out of golf size ball.

after allowing to cook for some mix into the cooked egg plant
optional but very tasty is adding gumadikaya vadiyallu which are fried in oil slightly to the whole dish and letting them soak up the water that comes from the tamarind and egg plant combination.
